Toro, akami, kampachi, madai, shima aji, akamutsu, kinki, Hokkaido uni, botan ebi and more, depending on your package.

Seasoned Rice

Sushi rice seasoned by hand and kept at the right temperature so every bite of nigiri holds together and melts apart.

Station & Tools

Knives, cutting boards, bamboo mats, serving boards and garnishes — everything needed to run a professional counter.

Wagyu Finish

Miyazaki wagyu rolls and wagyu nigiri are finished at the station so the marbling just begins to melt.

Presentation

Rolls and nigiri are plated on boards and platters designed to look as good in photos as they taste.

Clean Departure

When service ends, the station is packed away and your kitchen or venue is left the way we found it.

What You Provide

Just a table and your guests

The station needs very little: a sturdy table or counter space near your gathering and access to a sink nearby. Apartments, lofts, offices, rooftops, event halls and restaurants all work beautifully.
